Both Freekeh and Maftoul (Couscous) are easy to fix and taste especially great with Nabali Olive Oil! Here’s the basic recipes for how to cook these great Palestinian staples.

Freekh Up Close in a Bowl

Freekeh
To prepare as a rice alternative, bring 2 1/2 c of water to a boil. Rinse 250 g pack of Freekeh well then sauté in 4 Tbsp of Nabali Olive Oil for 3 min. Add water to Freekeh and 1 tsp of salt and black pepper each. Cover and simmer 30 min. Fluff and serve.

Maftoul Box and Bowl

Maftoul:

Bring 2 1/4 c of water to a boil. Sauté 250 g pack of maftoul in 4 Tbsp of Nabali Olive Oil for 3 min. Add water to maftoul, 1 tsp salt and black pepper each. Cover and simmer for 15 min. Fluff an serve.
